They must remain suspended, retain an appealing colour and survive storage without becoming indistinct. A bakery filling faces different requirements: it must withstand heat, remain in place and preserve its texture.

The challenge continues inside the final product. Acidity, sugar, pectin and moisture interact with the surrounding dairy or plant-based matrix. If that balance is wrong, yoghurt can release liquid, viscosity can change and the fruit can lose its structure. This makes Zentis more than an ingredient supplier. Its food technologists and process engineers also help customers integrate preparations into existing manufacturing systems and develop new processing methods.

At its Aachen site alone, more than fifty specialists work in research and development. Their work includes clean-label preparations, solutions with less sugar, stable inclusions and formulations for pH-sensitive or long-life products. Each concept must satisfy the consumer while also functioning reliably in industrial production.

The recipe cannot be separated from the machinery that must process it.

This positions Zentis less as a bulk supplier and more as an external development partner, adding specialised application knowledge to the customer’s own R&D. The food brand owns the consumer relationship, but part of the knowledge determining texture, stability and manufacturability may sit with the hidden supplier.

Naturalness as a Specification

Consumers increasingly want recognisable fruit, fewer additives and simpler labels. Manufacturers simultaneously need safety, shelf life, affordability and efficient production.

Meeting those demands requires precise knowledge of fruit varieties, pectin, acidity, temperature and process behaviour. A product may look less engineered on the label because more engineering was needed behind it.

The less engineered food is supposed to feel, the more precisely its natural ingredients must be understood.

The consumer sees a strawberry piece as evidence of naturalness. The yoghurt manufacturer sees colour, texture, stability and compatibility with its production line. Zentis must see both at the same time.
